Tortellini Soup

Yesterday we had some CRAZY weather here in Arizona.
It snowed!
Yes, I just said Snow!
It was pretty amazing to see our beloved dessert covered in white stuff.
So for Dinner, last night, I decided to make a warm and hearty soup to celebrate
our unusually cold weather!
In the midst of all the crazy weather yesterday afternoon,
we headed over to our neighborhood farmers market and picked up some
fresh, local veggies
 Including some Fresh Spinach, and Leeks!
I also picked up some Fresh Italian Sausage from another vendor as well,
that I knew would be the perfect touch for this delicious soup!
You will notice that I used a Low Sodium Chicken Broth and Fat Free Evaporated Milk.
You can easily substitute regular chicken broth and any milk you have in your refrigerator.
I wanted to able to control the fat and salt content to try and make this as healthy as possible.
And if you like a little spice, you can also add 1-2 Tbsp of Crushed Red Pepper, to give it a little kick!
