Perfect Lemon Bars

I have an other Sweet Recipe to share with you today!
Here in Arizona, it is Citrus Season!
Oranges, Grapefuit, and Lemons are coming off trees all over the place!
So last week when I went to drop off my little man at Preschool
and his teacher offered me a bag full of citrus right off her tree,
I knew EXACTLY what I was going to make!
So, I guessing you want to know what EXACTLY makes a Perfect Lemon Bar?
Well, if you ask me, it’s 2 things.
1. FRESH LEMONS & LEMON ZEST (no bottled concentrate allowed!
2. CRUST. My recipe calls for toasted coconut in the crust which adds texture and flavor
that just CANNOT be beat!
So Want to know how to make them?
Here we go:
Using a Food Processor with a blade attached, combine your ingredients for your crust
{including that yummy toasted coconut}
And Pulse until it is coarse.
Next in a 9×13 baking dish lined with parchment paper spread out that Crust!
See ALL of those dark brown freckles?? That is that YUMMY toasted Coconut :0)
Now using your fingers, press those crumbles into your baking dish to create the crust.
Pop this into a Preheated 350 degree oven and bake for 25 minutes.
While it is baking, Prepare your lemon filling.
Start with a clean bowl and blade for your food processor,
And combine ALL ingredients for your filling including some FRESH lemon Zest
& FRESH Lemon Juice!
Pulse all ingredients in your Food Processor until combined and slightly frothy.
Once your crust is done baking, pour your lemon filling over the warm crust and bake for another 25 minutes, and the top will become a light golden brown.
Allow to cool completely.
I even put mine in the refrigerator to get them nice and chilly before I cut them
And sprinkle with Powder Sugar.
These are the perfect treat to add a little sunshine to your day!
{and might even help you chase away some of those winter blues!}
